Bacon Ranch Potato Salad

Wow I haven't posted in while! I went to post a beauty tutorial the other day and my memory card broke. So I haven't been able to use my camera for a bit. I ordered one on ebay but its taking too long to get here! I went through my old files and found a post I was planning on publishing this summer, but hey you can eat potato salad in the winter too ha!

Ingredients

10-11 small red skin potatoes scrubbed clean
1/2 lb bacon cooked
3 green onions chopped
1-1 1/2 cups of ranch dressing
1 cup shredded cheddar cheese

1. Boil potatoes with a few dashes of salt. I like to throw in a boullion cube as well. Cook until soft but not mushy. Cut into bite size chunks. Let cool slightly.

2. Take cooked and drained bacon and chop or run in the food processor a few times. Add to potatoes.

3. Add green onions, ranch and cheese. Toss. Serve warm or chilled.

Hubby grilled some awesome pork chops with this salad. (He wanted me to post a pic of them, he was so proud)

Ranch Pork Chops w/ Roasted Garlic Mashed Potatoes

This is a delicious recipe, cheap and filling.

Ingredients:

6 pork chops can be boneless or bone-in
1 packet dry ranch seasoning
10 oz can cream of chicken soup

1. Place chops in crockpot. Mix ranch and chicken soup and pour/spread over chops. I would suggest using only 3/4 the packet as it came out a bit salty using the whole packet.

2. Cook on low 6 hours.

Roasted Garlic Mashed Potatoes

Ingredients:

4lbs peeled, washed and cubed potatoes
5 tablespoons butter
1 cup fresh, grated parmesan cheese
6 cloves roasted garlic (for instructions go here)
1-1/2 cups warm milk
1 beef or chicken boullion cube.
salt and pepper to taste

1. Boil potatoes with boullion until tender. You can substitute a cup of beef or chicken broth for the boullion.

2. Drain and empty into mixing bowl. Mix on low just a little, then add butter, parmesan, milk, garlic, salt and pepper. Mix until desired consistency. You can add more or less milk to make them runnier or thicker.

3. Scoop mashed potatoes onto a plate, top with pork chops and gravy.
